1. Sweet chunk of tea
White tea is derived from Chinese almond tofu tea in Vietnam. 
The restaurant that makes this tea famous is Hoang Ty. 
Recently, mucosa tea has become a movement in the snack taste of young people, especially popular on hot summer days. 
To make tea chunk is not difficult.

Raw materials to prepare:
- 20ml warm water,
- 60ml of fresh milk without sugar,
- 60ml whipped cream,
- 40g white sugar,
- 7g gelatin powder( or can be replaced with 3 gelatin leaves),
- 1 teaspoon of almond oil,
- 1 tablespoon sliced​​almonds.
- Longan, or lychee( you can add strawberries, jackfruit... optional)

Making:
- Step 1: Pour the powder( or leaves) of gelatine into a large bowl.
- Step 2: Add 20ml of warm water, dissolve gelatine with a dissolving rack.
- Step 3: Put fresh milk, cream, and rock sugar at the same time in the pot, bring to a low boil until all sugar is dissolved.
- Step 4: Pour slowly the bowl of gelatin powder dissolved with warm water into the heated milk pot, stir gently until the gelatin is completely dissolved, then add 1 teaspoon of almond oil.
- Step 5: Take the pot out of the kitchen, pour it into a glass or plastic mold, wait for the chunk to cool down, then put it in the refrigerator, leave for 4- 5 hours until it hardens.
- Step 6: Put the sugar alum and boil with a small cup of filtered water, cook until the sugar dissolves, let it cool.
- Step 7: Mix freshly boiled sweet sugar water, add the fabric or longan( peeled and seeded) to boil again, then turn off the heat immediately so that the fabric and longan retain their crispness.
- Step 8: Almond slices to cook at 160 degrees Celsius for 3- 4 minutes until almonds are ripe.
