1. 2. After rinsing for the second time, mix 1 teaspoon of alum puree with about 1 liter of cold water, add the sponge pulp, soak it for about 5 minutes, take it out and drain it, rinse it with cold water. 2 times and then squeeze well.

3. Dissolve 10g of white slaked lime( betel curd) with 2 liters of water, let stand for about 10 minutes, decant for clear water. Depending on how much pomelo peel you want to make, mix enough lime juice to soak up the amount of pomelo pulp. Soak pomelo pulp in lime water for 12 hours, take it out, squeeze it through cold water several times, then squeeze it out.
After squeezing, the white pulp is porous, soft but not in the form of mushy, smelling no pungent lime smell is satisfactory. C. Additive preparation:
Materials and processing:
– 150g green beans, soaked, peeled, steamed, or cooked like rice.
– Coconut milk: 1 can
– 2 tablespoons tapioca starch mixed with a bowl of cold water.

D. Cooking tea:
– Put about 2 liters of water on the stove, add 600g of white granulated sugar( optionally increase or decrease the amount of sugar according to taste), simmer until the sugar dissolves, then drop the pomelo pulp to cook( the pomelo pulp will expand), seasoning Add about cà teaspoon of salt to the teapot, drop the green beans into the pot, stir well, bring the water to a boil, add the vanilla.
- Slowly add the tapioca flour until the desired consistency is reached
- Let it cool and then put it in the refrigerator for 3- 4 hours to cool. Note: if you want to eat with shaved ice, then boil the sugar water to make it a little sweeter.

2. Khuc Bach tea:
A. Ingredients: make 5 bowls
- The basic part of Khuc Bach tea: 120ml fresh milk without sugar, 120ml fresh milk cream, 40g white granulated sugar, 1 teaspoon almond oil, 20ml warm water, 7g gelatin powder( or can be replaced with 3 gelatin leaves), 1 tablespoon sliced​​almonds
- Green tea part: 120ml of fresh milk without sugar, 120ml of fresh milk cream, 40g of white granulated sugar, 1 teaspoon of green tea powder, 20ml of warm water, 20ml of warm water to mix with green tea powder, 7g of gelatin powder( or can be replaced with 3 gelatin leaves), 1 tablespoon sliced​​almonds
- Sugar water for serving: 40g rock sugar
- Long- longan rice with seeds, or lychee

B. How to do it:
- Put gelatin powder in a bowl.
- Add 20ml of warm water, mix until the gelatin dissolves.
- Put fresh milk, fresh cream, white granulated sugar in a pot, bring to a boil over low heat until the sugar dissolves.
- Slowly pour the bowl of gelatin powder dissolved with warm water in step 2 into the heated milk pot, gently stir with a ladle to dissolve the gelatin completely, then add the almond oil.
- Remove the pot from the stove, pour it into a clean glass mold, let it cool completely, then put it in the refrigerator, let it sit for 4- 5 hours until it is completely frozen.
- The green tea part: put the green tea in a bowl, mix 20ml of warm water to dissolve the green tea powder completely.
- The gelatin powder you make is similar to the gelatin powder in steps 2 and boil the milk, fresh milk cream, sugar until dissolved, then add the gelatin and green tea in step 6 and stir well.
- Remove the pot from the stove, pour it into a clean glass mold, let it cool completely, then put it in the refrigerator, let it sit for 4- 5 hours until it is completely frozen.
- Heat rock sugar with a small bowl of filtered water, cook until the sugar dissolves, let it cool.
- Lychee or longan or rambutan separates the seeds, if you use canned lychee, you keep the sugar water to pour over the tea surface.
- Almond slices bake at 160 degrees Celsius for about 3- 4 minutes until the almonds are ripe, or you can roast on the stove until the almonds are golden.
- After the jelly has been frozen, the white tea and green tea should be put on a clean cutting board and cut into bite-sized squares.
- When using a little white jelly or green tea jelly in the bowl, add lychee, sugar water, sprinkle almonds on top, serve cold
